Atualização do Ministério da Agricultura passa a valer nesta terça-feira (2) para tentar reforçar padronização e dar mais transparência para o consumidor
As novas regras para produção do presunto passam a valer nessa terça-feira (2). A normativa publicada pelo Ministério da Agricultura no último dia 18, altera normas de qualidade e identidade para o presunto. O produto passa a ser classificado em 4 tipos: presunto cozido, presunto cozido superior, presunto cozido tenro e presunto de ave.
Além disso, foram detalhados os ingredientes que podem ser usados em cada tipo. De forma geral, o produto passará a ter mais proteína e menos água.
Os estabelecimentos registrados no ministério terão o prazo de um ano para se adequarem às mudanças.
É a primeira atualização nas regras para o produto em mais de 20 anos — a regulamentação anterior é de julho de 2000.
As mudanças devem trazer mais transparência para o consumidor, acredita Márcia Haguiwara, pesquisadora do Instituto de Tecnologia de Alimentos (Ital).
Tipos de presunto
Presunto cozido, presunto cozido superior e presunto cozido tenro são produtos obtidos de cortes íntegros de pernil de porco, curado, cozido, defumado ou não, desossado ou não, com adição de ingredientes. Eles são diferenciados por alguns processos. São eles:
- Presunto cozido: pode conter carne moída, que é usada para preencher o alimento quando, após fatiar, ficam buracos em sua forma; não pode ter pele;
- Presunto cozido superior: não pode ter carne moída, mas pode ter pele;
- Presunto cozido tenro: é obrigatoriamente defumado.
Já o presunto de aves deve ser obtido exclusivamente de carnes do membro posterior (as pernas), desossadas, moídas ou não. A portaria não determina quais são as aves que podem dar origem ao produto.
Segundo Márcia, é a primeira vez que esse tipo de presunto é abordado em uma normativa de âmbito federal. Até o momento, ele só era descrito em algumas legislações estaduais.
O mesmo acontece com o presunto cozido tenro. O nome já era usado em embalagens, mas não aparecia na normativa de julho de 2000.
Ingredientes
A portaria detalha todos os ingredientes que podem e devem ser usados na produção do presunto cozido, com as quantidades máximas. Ela também exige que tudo seja descrito no rótulo.
Para Márcia, isso faz com que haja menos chances de fraude, já que é possível checar o que está sendo comprado de fato, com a exigência de mais detalhamento na embalagem.
Ela também explica que os novos ingredientes permitidos pela Agência Nacional de Vigilância Sanitária (Anvisa) dão espaço para o setor investir em inovações, para melhorar a qualidade do presunto. Leia mais sobre eles abaixo.
Melhor textura e firmeza: passa a valer o limite máximo de 25% de colágeno presente em relação à proteína total do presunto. Para o presunto de aves, essa porcentagem deve ser de, no máximo, 10%.
O colágeno está presente em diversos lugares, como a nossa pele, e é usado para deixar a carne mais firme. Além do componente que vem naturalmente na carne, pode ser acrescentado artificialmente.
Para melhorar a textura do produto, deixando ele menos quebradiço na hora de fatiar, também poderá ser usada uma enzima como coadjuvante de tecnologia, a transglutaminase.
Carne moída no presunto suíno: para os tipos que permitem o uso dela, também foi determinado um percentual máximo desse ingrediente. O que passa a valer:
- presunto cozido: 10%
- presunto cozido tenro: 5%
O presunto cozido superior não pode passar por esse processo.
Mais proteína: a quantidade mínima de proteína também é limitada. Márcia, do Ital, explica que, para atingir as porcentagens, a proteína usada pode ser tanto carnes quanto a soja, que também tem o elemento.

- presunto cozido: passa de 14% para 16%;
- presunto cozido superior: permanece em 16,5%;
- presunto cozido tenro: 16%;
- presunto de aves: 14%
Menos água: a relação umidade/proteína foi determinada da seguinte forma:
- presunto cozido: passa de 5,35% para 4,8%;
- presunto cozido tenro: 4,5%;
- presunto cozido superior: permanece em 4,8%;
- presunto de aves: 5,2%.
Quanto menor essa relação, melhor a qualidade.
